Salads and Dressings
It's amazing what happens to lettuce when you add things to it. It transforms from rabbit food to something delicious that just happens to be good for you. After working in the food industry I learned that a number of people (as well as rabbits) can't digest iceberg lettuce. I also learned that radicchio; a colourful but tough leafy vegetable, was very bitter tasting. Many people (including me) always put it to the side of the plate. With these observations made, we came up with the basic tearoom salad which comprised mainly of romaine lettuce, baby spinach, shredded carrot and red cabbage. The small amount of red cabbage gave the salad a wonderful colour and also a nice, peppery bite.
This basic salad was changed up with the addition of different toppings and dressings. Some suggestions for making a tasty salad are:
- Rip the leaves with your hands or cut them with a plastic knife. Metal knives cause premature rust to form on the lettuce.
- Use a lettuce spinner to wash and dry the lettuce.
- Add garnishes to the side of the plate to fancy it up.
- Most of the pre-made salad dressings you buy in the store are quite tasty. Don't feel bad about offering those to your guests.
