Lemon Poppy Seed Pastry
This is a tasty pastry we used for Lemon Unicorn Horns.
- 4 cups all-purpose flour
- 4 tsp baking powder
- 1/3 cup poppy seeds
- 1 finely zested lemon
- 1/2 pound butter
- 1/4 tsp salt
- 1 egg
- Mix dry ingredients together.
- Cut in butter with a pastry cutter or two knives until mixture resembles small pebbles or appears course in texture.
- Crack one egg into the bottom of a glass, one cup measure.
- Fill to one cup mark with lemon juice and whisk with a fork until well blended but not frothy.
- Make a well in flour mixture.
- Pour egg mixture into well being careful to gradually mix wet ingredients into the dry, pulling mixtures together until a ball forms. The dough will be a bit sticky and somewhat resemble regular pie pastry.
- Store in Ziploc freezer bag.
