Cucumber Sandwiches

We often made fancy cucumber sandwiches for our Special Tea Luncheons. We made these with a variety of bread. White bread was the most popular.

• 1 loaf white bread, sliced
• 1 pkg cream cheese, softened
• 1/3 cup sour cream
• 1/4 cup mayonnaise
• 2 tbsp fine herb soup mix
• 1 sliced cucumber

1. Place cream cheese, sour cream, mayonnaise and herbs in a mixing bowl and blend well until fluffy.
2. Spread liberally on sliced bread with crusts removed.
3. Add sliced cucumber and another bread slice.

Fancy them up: You can diagonally cut the sandwiches into triangles, or even use a cookie cutter to make fancy shapes.
