Root Soup
Yummy, warm and vegetarian! This good mood soup is loaded with metabolic enhancers beta-carotene, and vitamins.
- Select a large soup pot.
- Sauté onion, celery root, parsnips, and carrots until caramelized.
- Add vegetable juice.
- Refill bottle with water and add to the pot.
- Add yams, turnip, and spices.
- Heat to a boil then set to simmer.
- Stir in spices.
- Soup is best after simmering for at least one hour.
