Butter Tarts
Go big! Go mini! Go for more! These favourites are sure to please. Try adding coconut, nuts or mixed raisins and currants.
- pie pastry
- 1 cup corn syrup or substitute 1 cup of maple syrup
- 3 large size eggs
- 1/3 cup butter
- 1/3 cup sugar (brown or white)
- 2 tsp vanilla extract
- Prepare pastry and cut out large enough circles to fit in muffin tins.
- Sprinkle morsels (raisins, coconut, nuts etc.) to cover the muffin tin bottom or pastry shells.
- Whisk the ingredients together.
- Pour into shells to 2/3 full.
- Place on a baking sheet to catch any drips that will occur.
- Bake at 350 F oven for 20 minutes.
- Allow tarts to cool before serving. They can really burn the roof of your mouth!
