Country Road Cookies
- 1 cup non-hydrogenated margarine
- 1 cup packed brown sugar
- 2 large eggs
- 2 tsp vanilla
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2-1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 2 cups white chocolate chips
- 1 cup slivered almonds or chopped pecans
- Measure margarine and sugar into a mixing bowl.
- Mix until near fluffy.
- Add eggs and mix.
- Add vanilla and mix.
- Add flour, baking soda, cocoa, salt and mix.
- Fold in chocolate chips and nuts.
- Using 2 teaspoons, scoop dollops of cookie dough onto parchment-lined cookie sheet, evenly spaced allowing for some expansion.
- Bake at 350 F for 9 minutes.
- Remove cookies from pan and allow to cool on wire rack.
